Ah, the meringue cookie. So light, delicate, and marshmallowy. With only a few ingredients it’s also SUPER SIMPLE to make. Apart from my love FINAL FANTASY, DRAGON QUEST is another Japanese Role-Playing video game series that I’ve come to love. Generally, you play as a hero or heroine who is tasked with saving the world from some great evil. Along the way, you meet a band of colorful character and fight hoards of monsters to complete your quest. One of the best known enemies from the DRAGON QUEST series is the SLIME.
This simple blue drop of goo gazes at you with his sweet grin, all the while beating the living daylights out of you! His family, which include other colors as well as the infamous Metallic Slime dot the landscape and make your journey perilous to say the least, and with meringue cookies usually having the Slimes’ signature shape it was a no-brainer to create this dessert!
To make the meringues you will need…
- 3 large egg whites at room temperature
- ¾ c. superfine or castor sugar
- ¼ tsp. Vanilla
- ¼ tsp of Cream of Tartar
- Blue food coloring
- Baking Tray lined with parchment paper
- Candy eyeballs (easily found at baking supply stores or Michael’s)
- Red or pink colored buttercream in a pastry bag fitted with a small round tip
- White royal icing in a pastry bag fitted with a small round tip (the bag isn’t totally necessary, it just makes the eye application easier)
Let me show you how it’s done!
- Preheat your oven to 225 degrees F.
- In the bowl of a stand mixer fitted with a whisk attachment (or just use a hand mixer) add the egg whites and cream of tartar and whip on medium-high speed until they get light and frothy. (Make sure the bowl and whisk are free from any oils or fats, which will stop the meringues from whipping up. You can wipe them down with a paper towel soaked with a little bit of white vinegar if you want to be sure).
- Add the sugar a little bit at a time. Keep whipping until they form stiff peaks or when lifted out, the meringue on on the whisk holds its shape .
- Mix in the vanilla (or whatever flavor you want to use) and the food coloring. Don’t go too crazy with this. Too much liquid can interfere with the meringue setting up properly.
- Fill your piping bag with the meringue. And pipe whatever size slimes you like. Hold the piping back straight up and squeeze the bag, keeping the tip low in the meringue and at the last moment lift up. If you keep moving your hand up as you apply pressure you’re going to get a wonky shape. TIP: If you want to keep your parchment from moving around, use a bit of extra meringue to stick the paper to the baking tray!
- Bake the meringues for about an hour-and hour and a half, then turn off the oven, crack open the oven door and allow the meringues to dry out for a few hours or even overnight. Once the meringues are baked and cooled, it’s time to decorate!
- Take the royal icing and pipe two tiny dots onto the “face” of the slime and stick on two candy eyeballs.
- Use the pink icing to pipe on a smile.
